Hiding a page is essentially just taking it off the menu. Hidden pages are still accessible by linking to them on another page.

To "hide" any page of your website:

Either click "add" to make a new page, or go to Page Functions>Settings on an existing page.
On the Page Management window, click the " " box next to "Advanced Settings". This will display advanced options for the page.
Near of the top of these advanced options is one called "Hidden". Click in the box next to it to hide/unhide the page.
Click "update" at the bottom of the Page Management window.

Your page will no longer be displayed on your menu, but is still on your site, and can be linked to.
